THYME & ONION STUFFING
100g O'Donohues "day old" Batch Bread broken into small pieces
1 Tblsp fresh parsley (chopped)
1 Tblsp fresh thyme (chopped)
1 small onion cut into quarters
Salt and freshly ground black pepper
50g of softened butter.
- Put the bread, parsley, thyme and onion in a food processor.
- Process until you have fine breadcrumbs and the onion is finely chopped.
- Season and add in the butter.
- Give it another quick blitz and you have perfect fresh stuffing ready for your bird!
For stuffing Duck just add some Orange segments.
For Pork, replace the thyme with Sage and add in one diced apple and a handful of raisins. The possibilities are endless so go on, get stuffing!
